Fluffy Batter Brownies with Peanut Butter Drizzle

When buying any kind of food product, I like to find ways to make multiple different treats. In this post, we're going to use our Super Batter Matcha Pancake and Waffle mix to make some matcha chocolate brownies! They are easy to make, low(ish)-carb, paleo(ish) and delicious!
Also, you can copy this recipe with any of our paleo pancake mixes depending on the flavor you want. Let's get started!
BROWNIE MIX INGREDIENTS & INSTRUCTIONS:
1/2 Cup Super Batter Paleo Pancake Mix
1.5 Tbsp Cacao Powder
1/4 Cup of Coconut Oil (or butter)
2 eggs
3-4 Tbsp Honey (Or Maple Syrup)
1/2 Cup Dark Chocolate Chips
Tip: If you want more dense, fudgy brownies, add an extra 2-3 Tbsp of oil/butter and an extra 2-3 Tbsp of melted chocolate chips.
Instructions:
Preheat oven to 350 degrees
Whisk together the 1/4 C of coconut oil (or butter) with 3 to 4 Tbsp of honey (or maple syrup). Make sure oil/butter is at room temperature and liquid.
Add in the 2 eggs to the above mixture, whisk until combined
Melt the 1/2 C of dark chocolate chips in the microwave and add into the above mixture
Add the cacao powder and pancake mix, then continue mixing
Finally, add in a hand full of dark chocolate chips for good measure :)
Bake @ 350 for 10-15 minutes
PEANUT BUTTER DRIZZLE INGREDIENTS & INSTRUCTIONS:
1 Tbsp peanut butter
1 Splash of almond milk (or any other milk)
1 tsp maple syrup
1 tsp instant coffee (optional)
Instructions:
Mix the peanut butter, almond milk, maple syrup and instant coffee in a bowl
Microwave mixture for 10-15 seconds
Drizzle over the brownies :)
