Indian Turmeric Vegetable Pancakes (Paleo, Gluten-Free)

This dish is inspired by Uttapam, a classic South Indian vegetable pancake. It's healthy, tasty, and easy to make! Enjoy at any time of day.


Ingredients:

Coconut Oil

Onion

Tomato

Green Chili

Coriander Leaves

Super Batter Turmeric Superfood Pancake & Waffle Mix



Directions:

Heat coconut oil in pan.

Saute chopped onions in pan until translucent.

Add chopped tomatoes, chili, and coriander leaves and saute.

While the mixture is sauteeing, prepare the turmeric pancake mix with 1 cup mix and 1/2 cup water to get a thinner mixture than normal.

Pour the mixture onto the vegetables, cover, and cook for about 2 minutes on each side.

Enjoy with chutney and yogurt.
