Avocado or Coconut Oil
2c powdered sugar
Heat oil in a deep pan. You need to use enough for the donuts to fully submerge.
Meanwhile, in a separate pan, stir milk and powdered sugar together for the glaze.
Bring to a boil and then lit simmer for about 10 mins.
Prepare pancake mix. You may need to add a little more dry ingredients if your donuts aren’t staying together.
Once the oil is hot, use two spoons to plop the batter into the oil.
One scoops the batter, the other swipes it off the spoon into the oil and then catches the drips.
Use tongs to flip donuts so they brown on each side.
This depends on how hot your oil is, but usually its about 20-30 seconds per side.
Stack into an epic donut platter, drizzle glaze on top, and sprinkle shredded coconut on top!
