Lately we've been cycling our meat consumption, eating a plant-based diet during the week and being little carnivores on the weekends. Last night we were craving a savory snack, so we made the most delicious Sweet Potato Fries with a Vegan Garlic Lemon Aioli Dipping Sauce. This healthy snack is so easy to prepare, and your family is sure to be impressed.
Health benefits: This snack is full of healthy fats, complex carbohydrates, protein, and fiber.
For the Sweet Potato Fries:
Preheat oven to 400F
Cut and peel sweet potatoes (One small sweet potato per person)
Drizzle in olive oil, salt, pepper, and chili powder
Bake for around 40 minutes, until browned and crispy
For the Vegan Garlic Lemon Aioli Dipping Sauce:
1 cup raw cashews (if using soaked cashews, see notes)
3/4 cup water
2 – 4 garlic cloves
2 teaspoons dijon mustard
juice of 1/2 lemon
pinch of mineral salt, or to taste
Place cashews, water, garlic, dijon, and juice of lemon in a food processor and blend until creamy, about 45 seconds. Taste for flavor adding a little more of desired ingredients to taste.
Serve at room temperature.
