Super Batter Pancake Muffins

Try this fun twist on Super Batter by enjoying your pancakes in the convenient grab-and-go form of healthy and delicious muffins! This recipe is gluten-free, dairy-free, and paleo.


  • 2 cups Super Batter Superfood Pancake & Waffle Mix (any flavor will do!)

  • 2/3 cup non-dairy milk

  • 1 egg

  • 1/3 cup sweetener (maple syrup, allulose, coconut sugar, or honey)

  • optional mix-ins (chocolate chips, blueberries, etc.)


1. Preheat oven to 350°

2. Mix together pancake mix, non-dairy milk, egg, and 1/3 cup of sweetener

3. Spray muffin tin with nonstick spray or use muffin liners. Fill 2/3 of the way full. If you are using the mix-ins, do so now. About 1/2 to 1 TB of a mix in works great.

  • Bake for 14-15 minutes or until a toothpick, inserted, comes out clean.
