This is a delicious, healthy, and colorful peach cobbler that you can make at home using your Super Batter mix! Gluten-Free, Paleo, No Dairy. and No Sugar. Thanks to Jaklin Orlowski from Orange County for this recipe!
4 cups peeled, pitted, and sliced fresh peaches
1/4c sweetener (monkfruit, allulose, coconut sugar, etc)
1/4 tsp nutmeg
Toss peaches, sugar, and nutmeg in bowl. Set aside while mixing batter.
1/4c healthy sweetener
1/2 vegan milk (almond, cashew, etc)
1 large egg (or flax egg if vegan)
1 tbsp butter (or coconut oil)
1 tsp vanilla extract
1 tsp freshly grated lemon rind
Preheat oven to 350.
Combine pancake mix and sugar in large bowl.
Mix together milk, egg, melted butter, vanilla, lemon rind in separate bowl.
Slowly mix milk mixture to flour mixture.
Pour peaches in 8"x8" baking dish.
Pour batter evenly over peaches and bake approx. 35-40 min. until edges are slightly browned.
Remove from oven, let cool 20 min.
Serve warm over favorite healthy vanilla ice cream (halo top, nadamoo, etc.)
*Can also be had for breakfast as an upside down pancake & fruit topping.
