Super Batter Sweet Potato NOatmeal

This is basically dessert for breakfast, but actually good for you! Paleo, gluten-free, and so gooey.


1/3cup sweet potato cubes

1/4cup Super Batter Superfood Pancake & Waffle Mix (Cacao or Adaptogens)

1/2 tsp cinnamon

1/2cup non-dairy milk (almond milk, cashew, coconut, etc.)

1/2tbsp maple syrup or coconut sugar

1tsp coconut oil

frozen berries

nut butter

Optional additions:

1 scoop protein powder (cacao)

1/4c oats (if you don't care about being paleo)

1 egg (for extra fluff)

Note: You may have to add an extra splash of nondairy milk to compensate for extra dry ingredients.


-Microwave sweet potato until cooked, about 1-2 minutes.

-In a food processor, blend all ingredients except for berries and nut butter.

-Pour half batter into oven-safe mug, put in berries, then top with rest of batter.

-Microwave until batter looks fluffy and cooked, about 2 minutes.

-Optional: Broil in oven for a few minutes, until top of batter gets a nice browned edge.

-Mug, will be hot, so place on plate and serve topped with favorite nut butter.

-Dip your spoon in, and enjoy the gooey amazingness that you have just created.
