This is a fun take on the pancake cereal trend by Allison from New Orleans, Louisiana. This recipe can be made with any of our flavors and is really fun to try with the kids. Give it a go!
1 cup Super Batter Blue Matcha Pancake & Waffle Mix.
1 vegan egg* or normal egg
1 1/2 tbsp oil
1/2 c dairy-free milk of choice
2 tbsp rainbow sprinkles
*Use store bought vegan egg replacer OR 1 tbsp chia seeds or flax meal + 2 1/2 tbsp water, combine and let sit for 3-5 minutes
Combine mix and water as directed on package.
Add in sweetener.
Let sit for two minutes.
While batter is sitting, heat a pan on low heat.
Add sprinkles into batter and gently fold in
Pour batter into a piping bag.
Make small circles of batter around pan, do not overcrowd
Flip mini pancakes once bubbles have formed
Repeat until all batter is made
Serve in a bowl with vegan butter and syrup and enjoy <3
